Enticing pear crumble aromas with honeysuckle, candied lime and subtle musk. Crunchy green apple glides across the palate with delicious stone fruits and subtle gardenia. The silky and textural palate is left clean and refreshed with a burst of acidity and fruit.
Sourced from the Wangolina vineyards, an exceptional Spring flowering season produced a generous crop of Pinot Gris. The slow ripening conditions led to a later harvest, however it also allowed the grapes to develop great complexity of flavours. The grapes were 100% handpicked and whole bunch pressed to allow for gentle extraction of juice. 25% of the 2018 vintage is wild ferment, where we used only the naturally occurring yeast present in the surrounds to complete the fermentation. This portion was then fermented in aged French oak barriques for three months to give the wine complexity and palate structure. The remaining portion is fermented in stainless steel to preserve and enhance the fresh fruit, and spice characters. The two portions are then blended just prior to bottling.
